Parkers Farm Cheese balls and cheese logs

I typically buy cheese logs to serve as an appetizer—they’re great to have on hand when company drops in or you realize you need something extra to serve during a meal. But they can also be used as an ingredient in recipes. You can also substitute a flavored cheese log to add an interesting, flavorful twist to a recipe you already have.

Here are some fun recipes that you may want to try.

Chicken Florentine (a family favorite!)

One package frozen spinach leaves, cooked, cooled and drained
4 chicken breasts, cooked and chopped
1 can cream of mushroom soup
½ cup Milk
2 rolls Parkers Farm garlic cheese, chopped
Bread crumbs
Butter

Into a casserole dish, spread the spinach and top with the chopped chicken. Pour the soup over, then the milk. Top with the cheese and sprinkle a light layer of bread crumbs over the top. Dot with butter. Bake at 350 degrees for 30 to 40 minutes.

Garlic Cheese Grits

2 cups grits
1 ½ quarts water
1 Tablespoon salt
2 rolls Parkers Farm garlic cheese (or 1 garlic and 1 jalapeno), diced
1 stick butter
4 eggs, beaten
½ cup milk

Cook grits according to directions, using 1 ½ quarts water and 1 Tablespoon salt. Add remaining ingredients. Pour into greased baking dish. Bake at 300 degrees for 30 minutes.

Broccoli Cheese Casserole

2 bags frozen chopped broccoli, thawed (16oz each)
½ cup butter, melted
4 green onions, including tops, chopped
½ cup chopped celery
3 Tablespoons flour
1 roll Parkers Farm garlic cheese
1 can cream of mushroom soup
1 can or jar (4 ounces) sliced mushrooms, drained

Cook broccoli, drain. Saute onions and celery in melted butter until tender. Add flour. Cook for about 2 minutes, stirring constantly. Add cheese and stir until melted. Blend in soup. Add broccoli and mushrooms. Pour into a lightly greased casserole dish. Bake, covered at 350 degrees for about 30 minutes.
