Waiting for Santa? Grab a Snack!

Christmas Eve night – one night during the year when little ones are allowed to stay up past their bedtime in hopes of catching a glimpse of Santa Clause as he shimmies down the chimney to deliver holiday gifts. But along with the fun and excitement of staying up late also comes the late night munchies! So we’re rounded up some fun and delicious snacks to help keep your tummy from grumbling as you and your children wait up for Old Saint Nick.

A Fruit and Parkers Farm Cheese Plate: No, really. This may sound like a stuffy cocktail party appetizer, but when you’re snuggled together on the couch watching The Night Before Christmas, it might just hit the spot. It’s late, so you don’t necessarily want to load the kids with sugar—the fruit will satisfy the sweet tooth and the crackers, bread, and cheese will satisfy the savory. Feel free to get creative, too—apples, grapes, strawberries, raspberries, blueberries, anything your family likes! For mom and dad, a little white wine wouldn’t go too badly with the snack either!

Peanut Butter & Jelly Graham Sandwiches: Mmm… Who doesn’t like a good old peanut butter and jelly sandwich? At the risk of making your late-night snack feel like a school lunch, we suggest you mix it up and use graham crackers instead of bread. The sweetness of the jelly and the graham will disguise the fact that you’re actually indulging in a protein-rich snack.

Satisfy Santa’s Peanut Butter Craving

Recently I had this weird daydream where Santa comes down my chimney, looks to the right, sees yet another plate of decorated sugar cookies, lets out a huge sigh, and reluctantly takes a few bites. How sad! This year, I’m making it my mission to give Santa as many delicious and unique fireside treats as possible. The poor man can only eat so many cookies! Of course, as we all know, the best of the best desserts always include some Parkers Farm Peanut Butter

There is very little we like better than a quick, easy, and sweet peanut butter recipe, so this Cheerio Treat is definitely for us. Whether you throw this together for a special treat for the kids, office, or family gathering, these little bars will have everybody asking what your secret was. The best peanut butter cookie recipes

It’s the cookie season… err… we mean the holiday season! Time to turn on the oven, stop suppressing your sweet tooth, and indulge in some holiday goodness. Parkers Farm has put together a list of our favorite cookies for the season.

When I was little, my mom would take me to my grandma’s house for a week during my holiday break from school. There are three things I remember about those visits: the HUGE snow forts, the old-lady soap operas, and the peanut butter cookies. My grandma made the classic Betty Crocker recipe that she claimed not to edit, but I’m convinced she did. Betty Crocker herself couldn’t make peanut butter cookies that compared with Grandma Rose’s cookies!

Betty Crocker

½ cup granulated sugar
½ cup packed brown sugar
½ cup Parkers Farm Creamy Peanut Butter
¼ cup shortening
¼ cup butter, softened
1 egg
1 ¼ cups flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt


  1. Mix sugars, peanut butter, shortening, butter, and egg in a large bowl. Stir in remaining ingredients. Cover and refrigerate for about 2 hours or until firm.
  2.  Shape dough into 1 ¼-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar.
  3. Bake 9-10 minutes at 375˚F or until light golden brown. Cool 5 minutes on baking sheet before cooling on wire rack.

These small-bites will keep your guests happy and satisfied until the main meal is served. Best of all, these holiday appetizer recipes include some of our favorite ingredients – Parkers Farm peanut butter and salsa!

One of our favorite dips incorporates our two favorite ingredients—salsa and peanut butter!

Salsa and Peanut Butter Dip


1 ¼ cups Parker’s Farm Salsa
¼ cup Parker’s Farm Peanut Butter
2 tbsp chopped fresh cilantro
2 cups baked tortilla chips
1 red bell pepper, cut into wedges

All you have to do to perfect this dip is microwave your peanut butter for about 30 seconds and stir in the salsa and cilantro. The red pepper and tortilla chips both taste great with this dip.

2 lbs. thawed chicken wings
1 cup Parkers Farm Honey Roasted Peanut Butter

Going Beyond the Chip: Cooking with Salsa

I’m the first to admit that my go-to salsa “recipe” includes a bag of tortilla chips and a container of salsa—and that’s it. However, with such a vibrant ingredient, we needed to come up with a few new ideas that can help you incorporate it into more everyday cooking. If you can’t get enough salsa, but can’t quite justify eating more chips, give these ideas a try!

Southwest Salsa Burgers

Southwest Salsa Burgers from CookingLight.com

¼ cup finely chopped shallots
3/8 teaspoon salt
¼ teaspoon ground chipotle chile pepper
1/8 teaspoon black pepper
1 pound lean ground beef
¼ cup Parker’s Farm Salsa
Cooking spray
4 (1-ounce) slices Monterey Jack cheese
4 Boston lettuce leaves
4 (1 ½-ounce) hamburger buns, toasted
8 (1/8-inch-thick) tomato slices


  1. Combine the first five ingredients with two tablespoons of Parker’s Farm Salsa. Divide the seasoned mixture into four equal portions, shaping each into a patty.
  2. Heat a large skillet or grill pan over medium-high heat. Coat pan with cooking spray. Add patties to pan; cook 5 minutes on each side or until desired degree of doneness. Top each patty with one cheese slice; cook one additional minute or until cheese melts.
  3. Place 1 lettuce leaf on bottom half of each bun; top with 2 tomato slices, 1 patty, and 1 ½ teaspoons of Parker’s Farm Salsa.
